What a wonderful thing guacamole is! You can eat it as a bread spread, as a salad dressing or as a pasta sauce. Or just lick it off a spoon as a delicious in-between 😉

I make this about once a month. One definite item on the menu then is definitely the Mexican Salad!

Prep time: 5 mins

Cook time: 0 min

Serves: about 8-9 tbsp (depending on the size of the avocado)

1 ripe avocado

1 pod garlic

½ – 1 small lemon (adjust depending on taste)

1/3 tsp salt (add more if needed)

1 tsp sugar

Put everything in a small mixer jar and whiz. Taste and adjust seasoning.

Keeps for 4 days in the fridge.The top of the guacamole may turn dark after a few hours, but that’s ok – it is not spoiled.
