Honey-Mustard Baked Fish & Veges

I love baking my dinners because it requires little or no slaving over the stove! You can just mix everything and dash it into the oven. And then sit back with a glass of wine 🙂

Prep time: 10 mins (1 hour for marination)

Cook time: ~20 mins

Serves: 4

600 g Pink fish fillets (cut large. I like to use Surmai for this)

2 heaped tbsp of strong mustard sauce

1 tbsp Honey

2 tbsp sweet red chilli sauce

3/4 cup broccoli florets, cut medium

1/2 cup french beans, cut long

  1. Mix all ingredient together and set covered in the fridge for an hour
  2. Preheat oven to 220 degrees celcius
  3. Layer fish onto a lightly greased baking dish
  4. Distribute the vegetables on top
  5. Drizzle remaining marinade over everything
  6. Bake for 20 mins, uncovered
  7. Remove veges from the top. Lift the fish (carefully) out onto 4 plates. Add the veges back into the baking tray and roll very well in the left over sauce. Distribute veges onto the plates
  8. Serve with garlic mashed potatoes and a fresh salad
