This soup is one of my all time favourites. It tastes and smells nothing like cauliflower. Instead it tastes smooth, rich and decadent, without being that at all. It is super-nutritious.

Serves: 4 servings
2 cups cauliflower florets, cut large
5-7 whole garlic cloves
1 tbsp olive oil
Water to thin down to desired consistency
Salt, Pepper
Squeeze of lemon
- Heat oil in pressure cooker. On high flame, sauté the cauliflower and garlic till they start turning light brown – this step is critical. Make sure the pieces are all browned, else the soup will smell of cauliflower!
- Add 1/4 cup of water and salt. Close the lid. Switch off the burner after 1 whistle.
- Allow the mix to cool a little and then blend to a very fine paste.
- Return the mix to the pressure cooker, add 1/2 cup water and bring to a boil. Add more water to thin to desired consistency. Taste and adjust the salt. Season with pepper and a squeeze of lemon. Enjoy hot!
