Mushroom Soup

An easy-peasy, ready in minutes soup

Prep time: 15 mins

Cook time: ~15 mins

Serves: 4 servings

1 package mushrooms, roughly chopped

1 large onion, roughly chopped

4-5 whole garlic cloves

1 tbsp olive oil

1/2 cup milk

Water to thin down to desired consistency

Salt, Pepper

  1. Heat oil in  pressure cooker. On high flame, sauté the mushrooms, onions and garlic till they start turning light brown.
  2. Add 1/4 cup of water and salt. Close the lid. Switch off the burner after 1 whistle.
  3. Allow the mix to cool a little and then blend to a very fine paste.
  4. Return the mix to the pressure cooker, add the milk and bring to a boil. Add water to thin to desired consistency. Taste and adjust the salt. Season with pepper and enjoy hot!
