I love Guacamole. It can be used as bread spread for a quick sandwich, as a salad dressing or a pasta sauce!
I usually make this once a month. One definite item on the menu then is the Mexican Salad!

Serves: about 8-9 tbsp (depending on the size of the avocado)
1 ripe avocado
1 pod garlic
½ – 1 small lemon (adjust depending on taste)
1/3 tsp salt (add more if needed)
1 tsp sugar
Put everything in a small mixer jar and whiz. Taste and adjust seasoning. Keeps for 4 days in the fridge.
The top of the guacamole may turn dark after a few hours, but that’s ok – it is not spoiled.
