The no-rice Fried ‘Rice’

Sounds interesting, doesn’t it? I saw a mention of it on a friend’s Facebook page and was immediately attracted to it. I am a HUGE fan of chinese food, after all! While a lot of recipes mentioned that this tasted just like actual chinese fried rice, I wouldn’t go so far (I am a discerning rice fan). However, it definitely gives great variety to a person who is off grain & cereal (waaaah!) and is really tasty to boot. It is a wonderful hot meal to dig into at the end of a busy day. Fast, easy and remarkably versatile – here is my version of the no-rice cauliflower fried rice 🙂 The original recipe can be found here – there are some really helpful pictures in there as well.

Apple Crumble

A lovely treat when that sweet tooth strikes. It can be made for one or in a batch. It is packed with iron and natural goodness. Add cold milk to it and you have delicious and healthy breakfast. Pizza Muffins

These are just an amazing, feel good, pick-me-up snack. Packed with vegetables, they can be made and stored in the refrigerator for upto a week. Best eaten hot, do microwave before sinking your teeth into their yummy goodness! All vegetables I use are raw, except for corn, which I boil before adding. Avoid red / white onions as they tend to make the muffins smell stale if left for over a day.

Rajgira Vegetable Paratha

It is winter time & in India, this is the time to eat Parathas! Methi, Mooli, Bathua, red Carrots – so many yummy winter veges to choose from!

This recipe will allow you to increase the amount of veg per paratha. This recipe also freezes very well. Freeze the cooked parathas in an air tight box. When you want to use them, take them out and re heat on a hot tava to ensure crispness!

Banana Bread

This is a really wonderful bread that comes together in less than 10 minutes and takes about 45 minutes to bake. Easy to make on a weekend – it lasts a full week and provides a ready, healthy snack to carry along wherever you go. You can toast it and butter it. You can eat it cold, straight out of the fridge. It is truly a blessing.
